Green Peas and Spinach Veggie Burger (vegan)

Anyone who decides on a healthy diet cannot avoid green (leafy) vegetables, salads and herbs. Rightly so, because after all these foods are full of energy and are rich in antioxidants, amino acids, fiber, vitamins and minerals such as magnesium, calcium and iron - and very low in calories. The color alone puts you in a good mood and has something very soothing at the same time. All of these are reasons why the number of people interested in plant-based nutrition and healthy alternatives is growing steadily.

So I thought about combining one of the most popular (fast food) dishes with a full load of chlorophyll and this beautiful green veggie burger came out. Who doesn't want to bite into it right away? When I see it, my mouth is watering again.

The patties are easy to prepare, taste hearty and delicious and fit in every small budget. You probably already have most of the ingredients at home, you can get fresh spinach leaves in a health food store or at the weekly market. I used frozen organic peas because they make the dough nice and firm and malleable. They also provide an extra portion of vegetable protein.

As far as the topping is concerned, you can of course vary it as desired. Since I've never been a fan of mayonnaise, I prefer the super fruit avocado, sprinkled with lemon juice. It is one of my absolute top ten foods (it is also green), even if it is high in fat, it is healthy, unsaturated fatty acids. According to experts, these, together with the enzyme lipase contained in avocados, can help the body lose fat. So please don't be afraid of healthy fats, your body needs them to stay healthy.

What belongs to every burger for me are crispy lettuce, tomato slices, Dijon mustard and (organic) ketchup, even finely sliced ​​onions look pretty good. Last time I prepared the burgers with crispy wholemeal rolls instead of the soft "American" buns shown in the photos. It is the healthier and heartier version and it lasts much longer.

Burger patties

  • 50 gr fresh spinach
  • 100 gr peas (frozen) + 1 handful of peas extra
  • 50 gr leek
  • 80 grams of oatmeal
  • 2 tsp tapioca starch
  • 1 tablespoon of yeast flakes
  • 1 large shallot (diced)
  • 50 ml water
  • 10 gr mixed herbs
  • 30 gr breadcrumbs
  • 1.5 tsp Dijon mustard
  • 2 tsp flaxseed meal
  • 1/2 tsp paprika de la vera
  • 1 tsp sea salt
  • black pepper
  • freshly grated nutmeg
  • Garlic (optional)
  • vegan Worcestershire sauce
  • Oil for frying (olive oil, coconut oil ...)
1. Mix the spinach, peas, leeks and herbs with the water to a puree. You can do this with a blender or a good blender. Place the mass in a mixing bowl.

2. Fold the remaining ingredients and spices into the green mass and mix everything well until a firm dough is formed. Season with salt and pepper.

3. Heat a little oil in a pan, briefly roast the shallot cubes until they have a golden color. Remove from the pan and fold under the batter.

4. Shape the patties with wet hands. Brush the pan with oil and heat. Fry patties on both sides until golden brown for about 4-5 minutes. Drain on kitchen paper.

5. Briefly toast the burger bun, sprinkle with mustard and ketchup. Top the burger with a patty, lettuce, tomato slices, avocado slices, onions etc. Enjoy your meal!
